Two years ago, I helped create a cookbook with the members of my church. It was a creative outlet for me and for the most part, a lot of fun. I encouraged the recipe contributors to add a story with their recipe. I guess I like stories. Anyway, Johnny Cakes is my mom's recipe and this is the story that goes along with it.
When I was a little girl (four years old), my Mom always made these on 'wash day'. We lived in the country and had no running water, we had to pump water into buckets for the washing machine which was electric but the clothes had to be rung out on the ringer. No dryer, we hung clothes on the clothes line. Wash day was an all day affair so Mom would get up and put a pot of ham and beans on the stove and when we were ready to eat, she made Johnny Cakes.
Johnny Cakes
2 cups corn meal
2 tablespoons flour
1 egg
1 tablespoon oil
2 teaspoons baking powder
1 teaspoon salt
Enough milk to make the mixture a little thicker than the consistency of pancake batter.
1. Mix all ingredients together.
2. Spoon onto a hot grill or skillet sprayed with non-stick spray.
These are really good with soups or chili and really good with butter and jelly.
